1 can (400g) of mixed beans (kidney beans, black beans, and chickpeas), drained and rinsed

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon grated ginger

1 green chili, finely chopped (adjust to taste)

1 teaspoon cumin seeds

1 teaspoon garam masala

1 teaspoon smoked paprika

Salt and pepper, to taste

½ cup diced tomatoes (canned or fresh)

¼ cup cream cheese (or a dairy-free alternative)

1 cup shredded cheese (like cheddar or mozzarella)

4 slices of whole-grain or sourdough bread

Fresh coriander (cilantro), for garnish

Instructions
 

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Add garlic, ginger, and green chili, and cook for another minute until fragrant.

    Spice it Up: Stir in the cumin seeds, garam masala, and smoked paprika. Sauté for an additional minute, allowing the spices to toast slightly.

      Add Beans and Tomatoes: Gently fold in the mixed beans and diced tomatoes. Season with salt and pepper. Cook for about 5 minutes, letting the flavors meld together.

        Creamy Delight: Reduce the heat to low, then stir in the cream cheese until melted and well combined. Mix in half of the shredded cheese, ensuring everything is evenly incorporated.

          Toast the Bread: While the beans are cooking, toast the slices of bread to your desired crispiness.
