Cheesy Beef Enchilada Tortellini

1 (9 oz) package refrigerated cheese tortellini

1 lb ground beef

1 can (10 oz) enchilada sauce (red or green)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 small onion, diced

1 bell pepper, diced (any color)

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Salt and pepper, to taste

Cook the Tortellini: Begin by cooking the cheese tortellini according to package instructions. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5-7 minutes.

      Brown the Beef: Add the ground beef to the skillet with the vegetables. Cook until browned, breaking it up with a spoon as it cooks, about 6-8 minutes. Drain any excess fat.

        Season the Mixture: Stir in the chili powder, cumin, garlic powder, salt, and pepper. Pour in the enchilada sauce and mix to combine. Bring to a simmer and let it cook for another 5 minutes.

          Combine Tortellini and Cheese: Add the cooked tortellini to the skillet, mixing gently until the tortellini is well-coated in the beef and enchilada sauce mixture. Sprinkle half of the cheddar cheese and half of the Monterey Jack cheese into the skillet, stirring until melted and creamy.

            Transfer to Baking Dish: Preheat your oven to 375°F (190°C). Transfer the cheesy tortellini mixture to a greased 9x13-inch baking dish. Top with the remaining cheddar and Monterey Jack cheeses.

              Bake: Place in the preheated oven and bake for about 15-20 minutes, or until the cheese is bubbly and golden brown.
