1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese

1 cup salsa (mild or spicy based on preference)

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

4 large flour tortillas

1 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

For the Crispy Fries:

3 large russet potatoes, cut into fries

2 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - Rinse the cut potatoes under cold water to remove excess starch and pat them dry.

        - In a large bowl, toss the fries with olive oil, paprika, garlic powder, and salt until evenly coated.

          - Spread the fries out in a single layer on a baking sheet lined with parchment paper.

            - Bake for 25-30 minutes, flipping halfway, until golden and crispy.

              Make the Beef Filling:

                - In a large skillet, over medium heat, add the diced onion and minced garlic. Sauté until the onion becomes translucent (about 3-4 minutes).

                  - Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned (about 5-7 minutes). Drain excess fat.

                    - Stir in cooked rice, cumin, chili powder, salt, and pepper. Add salsa and half of the shredded cheese; mix until heated through.

                      Assemble the Burritos:

                        - Lay a tortilla flat on a clean surface. Spoon about 1/4 of the beef mixture onto the center.

                          - Sprinkle with a generous amount of the remaining cheese.

                            - Fold the sides of the tortilla inward, then roll from the bottom to form a burrito. Repeat for the remaining tortillas.

                              Toast the Burritos:

                                - In a clean skillet, place the burritos seam-side down over medium heat. Toast for about 2-3 minutes on each side until golden brown and the cheese melts inside.

                                  Serve:

                                    - Plate the crispy fries and burritos. Garnish with fresh cilantro and serve with a dollop of sour cream on the side.
