Ingredients
  

1 ½ cups warm water (110°F to 115°F)

2 tablespoons granulated sugar

1 packet (2 ¼ teaspoons) active dry yeast

4 cups all-purpose flour

1 teaspoon kosher salt

½ cup baking soda

1 large egg (for egg wash)

Coarse sea salt (for sprinkling)

8 ounces cheese (cheddar, mozzarella, or your choice), cut into cubes

Optional: mustard or cheese sauce (for dipping)

Instructions
 

In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes, until foamy.

    Stir in the flour and kosher salt, mixing until a dough forms. Knead the dough on a floured surface for about 5–7 minutes until smooth.

      Grease a large bowl with oil, place the dough inside, cover with a damp cloth, and let it rise in a warm area for about 1 hour, or until doubled in size.

        Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

          Once the dough has risen, punch it down and divide it into 12 equal pieces.

            Flatten each piece and place a cube of cheese in the center. Wrap the dough around the cheese, sealing it tightly.

              Bring a large pot of water to a boil and add the baking soda (carefully, as it will foam).

                Drop 3–4 pretzel bombs into the boiling water for about 30 seconds. Remove with a slotted spoon and place them on the prepared baking sheet.

                  Beat the egg in a small bowl and brush it over the tops of each pretzel bomb. Sprinkle with coarse sea salt.

                    Bake in the preheated oven for about 12–15 minutes, or until golden brown.

                      Once baked, remove from the oven and let cool slightly before serving. Serve with mustard or cheese sauce for dipping.
