2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1 cup shredded sharp cheddar cheese

1 cup buttermilk (or milk with 1 tablespoon vinegar)

1/4 cup olive oil

2 tablespoons fresh chives, chopped (optional)

Extra cheese and herbs for topping (optional)

Instructions
 

Preheat your oven to 375°F (190°C) and grease a 9x5-inch loaf pan or line it with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, salt, garlic powder, oregano, and thyme until well combined.

      Gently fold in the shredded cheddar cheese and chopped chives (if using) until evenly distributed.

        In a separate bowl, mix together the buttermilk and olive oil.

          Pour the wet ingredients into the dry ingredients, and stir until just combined. Be careful not to overmix; a few lumps are okay.

            Transfer the batter into the prepared loaf pan, smoothing the top with a spatula. Sprinkle extra cheese and herbs on top if desired.

              Bake in the preheated oven for 30-35 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.

                Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
