8 slices of crusty bread (such as sourdough or ciabatta), cubed

6 large eggs

2 cups whole milk

1 cup shredded sharp cheddar cheese

1 cup crumbled cooked bacon (about 8 strips)

1/2 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon Dijon mustard (optional)

Fresh parsley for garnish (optional)

Prepare the Bread: Preheat your oven to 350°F (175°C). Spread the cubed bread on a baking sheet and toast in the oven for about 10-15 minutes until lightly golden. Remove and let cool slightly.

    Mix Eggs and Milk: In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, pepper, and Dijon mustard (if using) until well combined.

      Combine Ingredients: Stir in the shredded cheddar cheese, crumbled bacon, and chopped green onions to the egg mixture. Add the toasted bread cubes and gently fold until the bread is evenly coated with the egg mixture.

        Let it Sit: Pour the mixture into a greased 9x13 inch baking dish or a round deep cake pan. Cover it with plastic wrap or foil and let it sit in the refrigerator for at least 30 minutes, or ideally overnight, to allow the bread to soak up the egg mixture.

          Bake: After letting it sit, remove the cover and bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the egg is set in the middle.

            Serve: Allow the strata to cool for about 10 minutes before slicing it into squares or wedges. Garnish with fresh parsley if desired, and serve warm.
