3 large russet potatoes, peeled and grated

1 cup sharp cheddar cheese, shredded

1 cup cooked bacon, crumbled

1/2 cup green onions, thinly sliced

2 large eggs

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Cooking spray or oil for greasing

Instructions
 

Preheat your oven to 400°F (200°C) and lightly grease a muffin tin with cooking spray or oil.

    In a large bowl, combine the grated potatoes with a good sprinkle of salt, and let them sit for about 10 minutes to release excess moisture.

      After 10 minutes, drain any excess liquid from the potatoes using a clean kitchen towel, pressing down to remove as much moisture as possible.

        In the same bowl, add the shredded cheese, crumbled bacon, sliced green onions, eggs, flour, garlic powder, onion powder, paprika, and season with salt and pepper. Mix well until fully combined.

          Spoon the potato mixture evenly into the prepared muffin tin, packing it down gently to shape the hash brown cups.

            Bake in the preheated oven for about 25-30 minutes, or until the tops are golden brown and crispy.

              Once baked, let the hash brown cups cool for a few minutes before carefully removing them from the tin.

                Serve warm with your favorite dipping sauces or toppings!
