2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, chilled and cubed

1 cup shredded sharp cheddar cheese

1/2 cup buttermilk

1 tablespoon chopped fresh chives (optional)

1 tablespoon melted butter (for brushing)

Preheat: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Dry Mix: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

      Cut in Butter: Add the chilled, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

        Add Cheese: Stir in the shredded cheddar cheese and, if desired, the chopped chives, ensuring they are evenly distributed throughout the flour mixture.

          Combine Wet Ingredients: Pour in the buttermilk gradually, mixing gently until the dough starts to come together. Be careful not to over-mix; it’s okay if there are some lumps.
