Ingredients

4 chicken thighs, boneless and skinless

3 tablespoons honey

3 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon Chinese rice wine (or dry sherry)

2 cloves garlic, minced

1 teaspoon five-spice powder

1 tablespoon sesame oil

½ teaspoon red food coloring (optional)

Salt and pepper to taste

Chopped green onions for garnish (optional)

Instructions

Marinate the Chicken: In a bowl, combine honey, soy sauce, hoisin sauce, rice wine, minced garlic, five-spice powder, sesame oil, and red food coloring (if using). Mix well.

Prepare the Chicken: Season the chicken thighs with salt and pepper. Add them to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 3 hours, preferably overnight for maximum flavor.

Preheat the Oven: Set your oven to 375°F (190°C). Line a baking sheet with aluminum foil and place a wire rack on top.

Bake the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken on the wire rack. Brush some marinade over the chicken and reserve the rest for basting.

Cooking: Bake the chicken in the preheated oven for 25-30 minutes, basting with the reserved marinade every 10 minutes, until the chicken is cooked through and has a nice caramelized exterior.

Broil for Extra Color: For a deeper char, switch to broil and cook for an additional 3-5 minutes, closely monitoring to avoid burning.

Rest and Serve: Remove the chicken from the oven and let it rest for 5 minutes. Slice and garnish with chopped green onions if desired. Serve with rice, steamed vegetables, or in a bao bun.
