Ingredients
  

1 lb ground beef or bison

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), chopped

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes, undrained

1 cup beef broth

2 teaspoons taco seasoning (or your favorite spice blend)

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese

½ cup sour cream or Greek yogurt

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, brown the ground beef or bison over medium heat, breaking it apart with a spatula. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and chopped bell pepper, cooking for an additional 3-4 minutes until softened.

      Stir in the black beans, corn, diced tomatoes (with juices), beef broth, and taco seasoning. Season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes to allow the flavors to meld together.

        In a large mixing bowl, combine the cooked rice, half of the cheddar cheese, and the sour cream. Mix well to combine.

          In a greased 9x13-inch casserole dish, layer half of the beef mixture on the bottom. Spread the rice mixture over the meat, then top with the remaining beef mixture.

            Sprinkle the top with the remaining cheddar cheese, ensuring an even layer.

              Cover the casserole dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                Remove from the oven and let it cool for about 5 minutes. Garnish with fresh cilantro, if desired, before serving.
