Ingredients
  

1 cup rolled oats

2 cups almond milk (or your choice of milk)

1 medium carrot, grated

1/4 cup raisins

1/4 cup chopped walnuts (or pecans)

1 teaspoon cinnamon

1/2 teaspoon nutmeg

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

A pinch of salt

Instructions
 

In a medium saucepan, combine the rolled oats and almond milk. Bring to a boil over medium heat.

    Stir in the grated carrot, raisins, chopped walnuts, cinnamon, nutmeg, maple syrup, vanilla extract, and a pinch of salt.

      Reduce heat to low and let the mixture simmer for about 5-7 minutes, stirring occasionally, until the oats have absorbed most of the liquid and have reached a creamy consistency.

        Remove from heat and let it sit for a minute to thicken further.
