2 large carrots, grated

2 medium apples (preferably Granny Smith or Honeycrisp), cored and diced

1/4 cup raisins or dried cranberries

1/4 cup walnuts or pecans, chopped

1/4 cup Greek yogurt (or vegan yogurt for a dairy-free option)

1 tablespoon honey or maple syrup

1 tablespoon lemon juice

1/2 teaspoon cinnamon

A pinch of salt

Fresh parsley or mint for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and diced apples.

    Add the raisins or cranberries and the chopped walnuts or pecans to the bowl.
