4 large eggs

1 cup cherry tomatoes, halved

1 teaspoon olive oil

1 clove garlic, minced

1 cup fresh basil leaves, roughly chopped

Salt and pepper, to taste

¼ cup fresh mozzarella cheese, diced

Balsamic glaze, for drizzling (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium oven-safe skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute or until fragrant.

      Add the halved cherry tomatoes to the skillet. Season with salt and pepper. Cook for another 4-5 minutes, until the tomatoes start to soften.

        Gently stir in the chopped basil, allowing the flavor to infuse with the tomatoes for about 1 more minute.

          Create four small wells in the tomato mixture with the back of a spoon and crack an egg into each well, keeping the yolk intact.

            Continue cooking on the stove for about 2-3 minutes, just until the egg whites begin to set around the edges.

              Sprinkle the diced mozzarella on top of the eggs and transfer the skillet to the preheated oven.

                Bake for 8-10 minutes, or until the egg whites are fully set and the yolks are still slightly runny depending on your preference.

                  Once done, carefully remove the skillet from the oven. Drizzle with balsamic glaze for an extra flavor kick if desired.

                    Serve immediately, garnished with additional basil if you like.
