1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup sour cream

½ cup brewed strong tea (or coffee), cooled

¼ cup brown sugar, packed

1 tsp cinnamon (for topping)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.

    In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

      In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

        Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          Alternate adding the flour mixture and the soured cream to the butter mixture, starting and ending with the flour. Mix until just combined.

            Gradually stir in the cooled brewed tea (or coffee) until fully integrated into the batter.

              In a small bowl, mix the brown sugar and the additional cinnamon together. Gently fold half of this mixture into the batter.

                Pour the batter into the prepared cake pan, spreading it evenly. Sprinkle the remaining cinnamon sugar mixture on top.

                  Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

                    Remove from the oven and let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                      Serve warm or at room temperature, preferably with a cup of your favorite coffee or tea.
