Cabbage Walnut Pasta

8 ounces of spaghetti or fettuccine

2 tablespoons olive oil

1 medium onion, thinly sliced

3 cloves garlic, minced

4 cups green cabbage, thinly sliced

1 teaspoon red pepper flakes (adjust to taste)

½ cup walnuts, roughly chopped

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 tablespoons lemon juice

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook for about 5 minutes until softened and translucent. Stir in the minced garlic and red pepper flakes, cooking for another 1-2 minutes until fragrant.

      Add the Cabbage: Gradually add the sliced cabbage to the skillet. Season with salt and pepper. Sauté, stirring occasionally, for about 10-15 minutes, until the cabbage has wilted and lightly caramelized.

        Incorporate Walnuts: Stir in the chopped walnuts and continue to cook for another 3 minutes, allowing the nuts to toast slightly and enhance their flavor.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet with the cabbage mixture, along with the reserved pasta water and lemon juice. Toss everything together until the pasta is well-coated and heated through. Adjust seasoning with additional salt and pepper if needed.

            Finish with Cheese: Remove from heat and sprinkle the grated Parmesan cheese (or nutritional yeast) over the pasta. Toss to combine, adding more pasta water if needed to achieve your desired consistency.
