4 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 large carrot, grated

1 red bell pepper, diced

½ cup fresh parsley, chopped

¼ cup green onions, finely sliced

½ cup roasted sunflower seeds

1 avocado, diced

For the Dressing:

¼ cup extra virgin olive oil

2 tablespoons apple cider vinegar

2 tablespoons honey or maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrot, diced red bell pepper, chopped parsley, sliced green onions, and roasted sunflower seeds.

    In a separate smaller bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper to make the dressing.

      Pour the dressing over the cabbage mixture and toss well to ensure everything is evenly coated.
