For the Butter Steak Bites:

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper, to taste

For the Garlic Herb Potatoes:

1 lb baby potatoes, halved

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat the oven to 400°F (200°C).

      - In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, oregano, thyme, salt, and pepper until well coated.

        - Spread the potatoes on a baking sheet in a single layer and roast in the oven for about 25-30 minutes or until golden and tender, flipping halfway through for even cooking.

          Cook the Steak Bites:

            - While the potatoes are roasting, heat a large skillet over medium-high heat.

              - Season the steak cubes with salt and pepper.

                - Once the skillet is hot, add the butter and let it melt, swirling it around to coat the pan.

                  - Add the steak bites in a single layer (working in batches if necessary) and sear for 2-3 minutes without moving them for a nice crust.

                    - Flip the steak bites and add the minced garlic, rosemary, and thyme. Cook for another 2-3 minutes for medium-rare.

                      - Remove the skillet from heat and let the steak bites rest for a couple of minutes.

                        Plate and Serve:

                          - Once the potatoes are done, garnish with chopped fresh parsley.

                            - Serve the butter steak bites alongside the garlic herb potatoes on a platter, drizzling any remaining garlic herb butter from the skillet over the top.
