1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup pecans, chopped

1/2 cup white chocolate chips (optional)

1/2 teaspoon ground cinnamon (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.

      Add the egg and vanilla extract to the butter mixture, mixing until well combined.

        In another bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon (if using).

          Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.

            Fold in the chopped pecans and white chocolate chips, if you're using them.

              Using a spoon or cookie scoop, drop tablespoonfuls of dough onto the prepared baking sheets, leaving space between each cookie since they will spread.

                Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden but the centers still look soft.

                  Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
