1 French baguette, sliced into ½ inch rounds

2 cups cherry tomatoes, halved

2 cups fresh basil leaves, torn

8 oz burrata cheese

3 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and black pepper, to taste

Zest of 1 lemon

Optional: a drizzle of honey for sweetness

Prep the Tomatoes: In a medium bowl, combine the halved cherry tomatoes with the torn basil leaves. Drizzle with 2 tablespoons of olive oil, balsamic vinegar, and season with salt, pepper, and lemon zest. Gently toss to combine and let marinate while you prepare the bread.

    Toast the Baguette: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet. Brush both sides lightly with the remaining olive oil and sprinkle with a pinch of salt. Bake for about 8-10 minutes, or until the bread is golden and crispy.

      Assemble the Bruschetta: Once the baguette slices are toasted, remove them from the oven and let them cool slightly. On each slice, place a generous spoonful of the marinated tomato and basil mixture.

        Add the Burrata: Tear the burrata cheese into large pieces (or slice if preferred) and place it on top of the tomato mixture on each bruschetta.

          Drizzle & Serve: Optional step; drizzle a little honey over the burrata for a sweet contrast. Serve immediately, garnished with extra basil leaves if desired.
