Ingredients

For the Pimento Cheese:

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/3 cup mayonnaise

1/4 cup diced pimentos, drained

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

For the Burgers:

1 pound ground beef (80/20 blend preferred)

1 tablespoon Worcestershire sauce

Salt and pepper to taste

4 hamburger buns, toasted

4 slices of crispy bacon (optional)

Fresh lettuce leaves

Sliced tomatoes

sliced pickles (optional)

Instructions

Make the Pimento Cheese:

    - In a medium bowl, combine the shredded cheddar cheese, softened cream cheese, mayonnaise, diced pimentos, Dijon mustard, garlic powder, smoked paprika, salt, and pepper.

      - Mix everything together until well combined and creamy. Taste and adjust seasoning if needed. Set aside in the refrigerator to chill while you prepare the burgers.

        Prepare the Burger Patties:

          - In a large mixing bowl, add the ground beef, Worcestershire sauce, salt, and pepper. Gently mix until just combined, being careful not to overwork the meat.

            - Divide the mixture into 4 equal portions and form them into patties, making slight indentations in the center to prevent them from puffing up while cooking.

              Cook the Burgers:

                - Preheat your grill or a non-stick skillet over medium-high heat. If grilling, oil the grates to prevent sticking.

                  - Cook the patties for about 4-5 minutes on one side until nicely browned. Flip and cook for another 3-4 minutes to reach your desired doneness (medium-rare is about 135°F).

                    - If using, add the crispy bacon on top of the patties during the last minute of cooking and cover to melt the cheese promptly.

                      Assemble the Burgers:

                        - Spread a generous portion of the chilled pimento cheese on the bottom half of each toasted hamburger bun.

                          - Layer with lettuce, the cooked burger patty, sliced tomatoes, and pickles, if desired.

                            - Top with the other half of the bun, and voila!

                              Serve:

                                - Serve immediately with your favorite side dishes like fries, coleslaw, or a simple salad.
