Burgers with Pimento Cheese

1 lb ground beef (80/20 blend)

1/2 cup pimento cheese (store-bought or homemade)

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1/2 teaspoon garlic powder

Salt and pepper to taste

4 hamburger buns

1 cup arugula or spinach

1 large tomato, sliced

Pickled jalapeños (optional, for an extra kick)

Olive oil for grilling

Prepare the Pimento Cheese: If making homemade pimento cheese, blend 1 cup shredded sharp cheddar cheese, 1/2 cup cream cheese, 1/4 cup diced pimentos, 2 tablespoons mayonnaise, and a dash of garlic powder in a bowl until smooth. Set aside.

    Mix the Burger Patties: In a mixing bowl, combine the ground beef, garlic powder, salt, and pepper. Gently mix until just combined. Be careful not to overwork the meat for tender patties.

      Shape the Patties: Divide the meat mixture into four equal portions and shape them into patties, making a slight indentation in the center to prevent them from puffing up while cooking.

        Preheat the Grill: Heat your grill or grill pan over medium-high heat. Lightly brush the grates with olive oil to prevent sticking.
