Buffalo Chicken Spaghetti Squash

Ingredients
  

1 medium spaghetti squash

2 cups cooked shredded chicken (rotisserie works great)

1/2 cup buffalo sauce (or to taste)

1/4 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup crumbled blue cheese (optional)

1/4 cup green onions, chopped (for garnish)

Olive oil

Salt and pepper to taste

Instructions
 

Preheat your oven to 400°F (200°C).

    Carefully slice the spaghetti squash in half lengthwise and scoop out the seeds.

      Brush the insides of the squash halves with olive oil and season with salt and pepper. Place them cut-side down on a baking sheet lined with parchment paper.

        Roast in the preheated oven for about 30-40 minutes, or until the flesh is tender and easily pierced with a fork.

          While the squash is roasting, in a medium bowl, combine the shredded chicken and buffalo sauce. Mix well to ensure the chicken is fully coated.

            When the squash is finished cooking, remove it from the oven and let it cool slightly. Using a fork, scrape the flesh to create spaghetti-like strands and place them in a large bowl.

              Mix in the buffalo chicken mixture and cream cheese until well combined. If desired, add half of the mozzarella cheese into the mix.

                Return the buffalo chicken spaghetti squash mixture back into the hollow squash halves. Top with the remaining mozzarella and crumble blue cheese, if using.

                  Place the stuffed squash halves back in the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

                    Remove from the oven, garnish with chopped green onions, and serve hot.
