2 cups all-purpose flour

1 cup warm water (110°F/43°C)

2 ¼ teaspoons active dry yeast (1 packet)

1 teaspoon sugar

½ teaspoon salt

2 tablespoons olive oil (plus more for drizzling)

1 cup cooked chicken, shredded

½ cup buffalo sauce (adjust to taste)

1 cup mozzarella cheese, shredded

½ cup blue cheese, crumbled (optional)

2 green onions, chopped

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Activate the Yeast: In a small bowl, combine warm water, sugar, and yeast. Allow it to sit for about 5-10 minutes until it becomes frothy.

    Prepare the Dough: In a large mixing bowl, combine the flour, salt, and olive oil. Once the yeast mixture is frothy, pour it into the flour mixture and stir with a wooden spoon until a rough dough forms.

      Knead the Dough: Transfer the dough onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic. Form it into a ball.

        First Rise: Place the dough into a well-oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm spot for about 1 hour, or until it has doubled in size.

          Prepare the Buffalo Chicken Filling: While the dough is rising, in a medium bowl, mix the shredded chicken with buffalo sauce. Adjust the sauce amount based on your spice preference.

            Shape the Focaccia: Once the dough has risen, punch it down and transfer it to a lined baking sheet (about 11x17 inches). Gently press and stretch it into a rectangle, ensuring an even thickness.

              Create Dimples: Using your fingers, create dimples all over the surface of the focaccia. Drizzle olive oil generously over the top.
