2 cups fresh broccoli florets, finely chopped

1 cup grated cheddar cheese (or vegan cheese)

1/2 cup all-purpose flour (or chickpea flour for a gluten-free option)

2 large eggs (or flax eggs for vegan option)

1/4 cup finely chopped onion

2 cloves garlic, minced

1/4 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

2 tablespoons olive oil (for frying)

Fresh herbs (dill or parsley) for garnish

Prep the Broccoli: Bring a pot of water to a boil and blanch the finely chopped broccoli for about 2 minutes until bright green. Drain and transfer to a bowl of ice water to stop the cooking process, then drain again and pat dry.

    Mix the Batter: In a large mixing bowl, combine the blanched broccoli, grated cheddar cheese, flour, eggs, chopped onion, minced garlic, baking powder, salt, black pepper, and paprika. Mix until well combined. The mixture should be thick enough to hold together; adjust flour if necessary.

      Heat the Oil: In a large skillet, heat the olive oil over medium heat. You can test if the oil is ready by dropping a small amount of the fritter mixture into the pan; it should sizzle.

        Fry the Fritters: Using a spoon or a small ice cream scoop, drop spoonfuls of the batter into the skillet. Flatten them slightly with the back of the spoon to form patties. Cook for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes on the other side. You may need to do this in batches to avoid overcrowding the pan.

          Drain and Serve: Remove the fritters from the skillet and place them on paper towels to drain excess oil. Garnish with fresh herbs before serving.
