Broccoli and Sausage Pasta

Ingredients
  

8 ounces pasta (your choice: penne, fusilli, or spaghetti)

2 tablespoons olive oil

1 pound Italian sausage (either sweet or spicy, casing removed)

4 cups broccoli florets

3 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1/2 cup chicken or vegetable broth

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets to the pot. Drain both the pasta and broccoli, reserving about 1/2 cup of the pasta water.

    Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 6-8 minutes. Drain excess fat if necessary.

      Add Garlic and Spices: Stir in the minced garlic and red pepper flakes (if using) into the sausage. Sauté for an additional 1-2 minutes until the garlic is fragrant.

        Combine Ingredients: Pour in the chicken or vegetable broth and stir, scraping up any browned bits from the bottom of the pan. Add the drained pasta and broccoli to the skillet. Toss everything together, adding reserved pasta water a little at a time to reach desired creaminess.

          Finish with Cheese: Sprinkle in the grated Parmesan cheese, and season with salt and pepper to taste. Toss again until the cheese is melted and well incorporated.

            Serve & Garnish: Divide the pasta among plates, and garnish with fresh basil or parsley if desired. Serve hot with additional Parmesan on the side.
