Ingredients

For the Brioche Dough:

4 cups all-purpose flour

¼ cup granulated sugar

1 teaspoon salt

2 ¼ teaspoons (1 packet) instant yeast

½ cup whole milk, warmed

4 large eggs

½ cup unsalted butter, softened, plus extra for frying

For the Raspberry Cheesecake Filling:

8 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh raspberries (or frozen, thawed)

1 tablespoon lemon juice

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

½ teaspoon vanilla extract

Instructions

Prepare the Brioche Dough:

    - In a large mixing bowl, combine the flour, sugar, salt, and instant yeast. Mix well.

      - In a separate bowl, whisk together the warmed milk and eggs until combined.

        - Gradually add the wet ingredients to the dry ingredients, mixing until a sticky dough forms.

          - Gently knead in the softened butter, a few tablespoons at a time, until fully incorporated. Knead until the dough is smooth and elastic (about 8-10 minutes).

            - Place the dough in a greased bowl, cover it with plastic wrap or a cloth, and let it rise in a warm place until doubled in size (about 1-2 hours).

              Make the Raspberry Cheesecake Filling:

                - In a mixing bowl, beat the softened cream cheese until smooth.

                  - Gradually add in the powdered sugar and continue to beat until creamy. Stir in the vanilla extract, lemon juice, and fresh raspberries gently until just combined. Refrigerate the filling while the dough rises.

                    Shape the Donuts:

                      - Once the dough has risen, punch it down and turn it out onto a lightly floured surface. Roll it out to about ½ inch thickness.

                        - Use a round cutter (about 3 inches in diameter) to cut out donut shapes. Use a smaller cutter (or the end of a piping tip) to cut out the centers.

                          - Carefully transfer the cut donuts to a baking sheet lined with parchment paper. Cover and let rise for about 30-45 minutes, until puffy.

                            Fry the Donuts:

                              - In a deep pot or fryer, heat the oil to 350°F (175°C). Fry the donuts in batches, about 2-3 minutes per side, until golden brown.

                                - Use a slotted spoon to transfer the fried donuts to a paper towel-lined plate to drain excess oil.

                                  Fill the Donuts:

                                    - Once donuts are cool enough to handle, use a piping bag fitted with a filling tip to inject the raspberry cheesecake filling into the center of each donut.

                                      Prepare the Glaze:

                                        - In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk or powdered sugar if needed.

                                          Glaze the Donuts:

                                            - Dip the tops of the filled donuts into the glaze, allowing the excess to drip off. Place them on a wire rack to set.

                                              Serve and Enjoy:

                                                - Your delicious brioche donuts with raspberry cheesecake filling are ready to enjoy! Serve fresh and warm for the best experience.
