Breakfast Rolls with Sausage, Egg, and Cheese

1 pound breakfast sausage, crumbled

6 large eggs

1 cup shredded cheddar cheese

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 package (8 oz) of refrigerated crescent roll dough

2 tablespoons chopped fresh chives or green onions (optional)

1 tablespoon butter, melted (for brushing)

Optional: hot sauce or salsa for serving

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a large skillet over medium heat, cook the crumbled breakfast sausage until browned and cooked through, about 5-7 minutes. Use a spatula to break it into small pieces as it cooks. Drain excess grease if needed.

      In a bowl, whisk together the eggs, salt, black pepper, garlic powder, and chopped chives or green onions, if using. Pour the egg mixture into the skillet with the cooked sausage and cook over medium-low heat, stirring gently, until the eggs are just set, about 4-5 minutes.

        Remove the skillet from heat and stir in the shredded cheddar cheese until melted and evenly combined.

          Unroll the crescent roll dough and separate it into triangles as per the package instructions.

            On each triangle, place a generous spoonful of the sausage and egg mixture near the wide end, then roll it up tightly, starting from the wide end to the point. Place the rolled breakfast rolls seam-side down on the prepared baking sheet.

              Brush the tops of the rolls with the melted butter for a golden finish.

                Bake in the preheated oven for 12-15 minutes or until golden brown and flaky.

                  Remove from the oven and let cool for a couple of minutes. Serve warm, optionally with hot sauce or salsa on the side.
