Ingredients

1 cup rolled oats

1/2 cup almond flour

1/2 cup mashed ripe banana (about 1 medium banana)

1/4 cup natural peanut butter (or almond butter)

1/4 cup honey or maple syrup

1/4 cup dark chocolate chips (or dried fruit for a healthier option)

1/2 tsp cinnamon

1/4 tsp salt

1/4 tsp baking powder

1/2 cup nuts (walnuts or pecans), roughly chopped (optional)

1/4 cup chia seeds

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the rolled oats, almond flour, cinnamon, salt, and baking powder. Mix well.

In another bowl, mash the ripe banana until smooth, then stir in the peanut butter and honey/maple syrup until fully combined.

Pour the banana mixture into the dry ingredients and mix until just combined.

Fold in the dark chocolate chips, nuts, and chia seeds. Ensure everything is evenly distributed throughout the dough.

Using a tablespoon, scoop out the dough and place onto the prepared baking sheet, flattening each cookie slightly with your fingers.

Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.

Remove from the oven and let them cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
