12 oz bow tie pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

1 tsp garlic powder

Salt and pepper to taste

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, red bell pepper, red onion, and slice the black olives. Place them in a large mixing bowl.

      Make the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, garlic powder, salt, and pepper until well combined.

        Combine Ingredients: Add the cooled bow tie pasta to the bowl with the chopped vegetables. Pour the dressing over the pasta mixture and toss gently to combine.

          Add Feta and Herbs: Fold in the crumbled feta cheese and freshly chopped parsley. Taste and adjust seasoning if needed.
