1 cup fresh blueberries (or frozen, thawed)

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/4 cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1/4 cup powdered sugar (for icing, optional)

1-2 tablespoons milk (for icing, optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a small bowl, gently mix the blueberries with lemon juice and a sprinkle of granulated sugar. Set aside to allow them to release their juices.

      Mix Dry Ingredients: In a large bowl, whisk together the flour, oats, brown sugar, granulated sugar, baking soda, baking powder, salt, and cinnamon.

        Cream Butter & Egg: In another bowl, cream together the softened butter and sugars until light and fluffy. Add the egg and vanilla extract, mixing well until combined.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated.

            Fold in Blueberries: Gently fold in the prepared blueberries, being careful not to mash them too much.

              Scoop and Bake: Using a cookie scoop or tablespoon, drop rounded portions of the dough onto the prepared baking sheet, leaving space between each cookie. Bake for 12-15 minutes or until the edges are golden brown.

                Cool Cookies: Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

                  Make Icing (Optional): In a small bowl, whisk together powdered sugar and enough milk to achieve a drizzle consistency. Drizzle over the cooled cookies if desired.
