1 cup rolled oats

1 cup almond milk (or your favorite milk)

1/2 cup Greek yogurt (plain or vanilla)

1/2 cup fresh blueberries (plus extra for topping)

Zest of 1 lemon

Juice of 1/2 lemon

2 tablespoons maple syrup or honey (adjust for sweetness)

1/2 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

Pinch of salt

Chia seeds (optional, for added texture and nutrition)

Instructions
 

In a medium bowl, combine the rolled oats, almond milk, and Greek yogurt. Stir until well mixed.

    Add in the fresh blueberries, lemon zest, lemon juice, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Mix until everything is fully incorporated.

      If using, add a tablespoon or two of chia seeds for extra nutrition and texture. Stir gently again.

        Divide the mixture into two airtight jars or containers. Seal tightly and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and softens.

          In the morning, give the oats a good stir and taste — adjust sweetness if desired. Top with additional blueberries, a sprinkle of lemon zest, or a drizzle of honey if desired.
