Black Pepper Chicken

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, coarsely ground

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

4 cloves garlic, minced

1-inch piece ginger, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 spring onions, chopped (for garnish)

1 teaspoon sesame oil

Salt to taste

Marinate the Chicken: In a bowl, combine the chicken pieces with black pepper, soy sauce, oyster sauce, and cornstarch. Mix well and let it marinate for at least 30 minutes.

    Prepare the Vegetables: Slice the red and green bell peppers and onion. Set aside.

      Heat the Oil: In a large frying pan or wok, heat the vegetable oil over medium-high heat.

        Cook the Chicken: Add the marinated chicken to the pan in a single layer. Cook for about 5-7 minutes or until the chicken is browned and cooked through. Remove and set aside.

          Sauté Aromatics: In the same pan, add the minced garlic and ginger. Sauté for about 1 minute until fragrant.

            Add Vegetables: Toss in the sliced bell peppers and onion. Stir-fry for about 3-4 minutes until they are tender yet crisp.

              Combine Everything: Return the cooked chicken to the pan and toss to combine. Drizzle with sesame oil and season with salt to taste.
