Ingredients
  

2 cups dried black beans (or 4 cans, drained and rinsed)

1 large onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 carrot, diced

2 celery stalks, diced

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

6 cups vegetable broth

1 can (14.5 oz) diced tomatoes, with juice

2 bay leaves

Salt and pepper, to taste

2 tablespoons olive oil

1 lime, juiced

Fresh cilantro, for garnish

Avocado slices, for serving (optional)

Instructions
 

Prepare the Beans (if using dried): Rinse and soak the dried black beans overnight in plenty of water. Drain and set aside.

    Sauté the Base: In a large pot, heat olive oil over medium heat. Add the diced onions, garlic, carrot, bell pepper, and celery. Sauté for 5-7 minutes, until the vegetables soften.

      Spice it Up: Stir in cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for another minute until fragrant.

        Combine Ingredients: Add the soaked black beans (or canned beans), diced tomatoes, vegetable broth, and bay leaves to the pot. Stir well to combine.

          Simmer: Bring the soup to a boil, then reduce heat to low. Cover and let simmer for 30-40 minutes (if using dried beans, simmer for 1.5-2 hours) or until beans are tender.

            Taste and Adjust: Once the beans are tender, remove the bay leaves and taste the soup. Adjust seasoning with salt, pepper, and lime juice as needed.

              Blend (Optional): For a creamier texture, you can blend a portion of the soup using an immersion blender or a regular blender, then return it to the pot.

                Serve: Ladle the soup into bowls, garnish with fresh cilantro and avocado slices if desired. Serve hot with lime wedges on the side.
