2 cups cooked birria meat (beef or goat), shredded

1 cup birria broth

1 bag (12 oz) tortilla chips

2 cups shredded Oaxaca cheese (or mozzarella)

1 cup diced onions

1 cup diced tomatoes

1/2 cup sliced jalapeños (fresh or pickled)

1/4 cup fresh cilantro, chopped

1 avocado, sliced

Sour cream, for drizzling

Lime wedges, for serving

Instructions
 

Prep the Birria: If you haven’t already, cook your birria meat. You can use beef chuck or goat, seasoned with spices like cumin, chili powder, garlic, and bay leaves, and braised until tender. Reserve 1 cup of the flavorful broth.

    Preheat Oven: Preheat your oven to 350°F (175°C).

      Layer the Chips: On a large baking sheet or oven-safe platter, spread out a layer of tortilla chips evenly.

        Add Meat and Broth: Scatter the shredded birria meat over the chips, then gently drizzle some of the reserved birria broth (about 1/4 cup) over the meat and chips to keep them moist and flavorful.

          Add Cheese and Toppings: Generously sprinkle the shredded Oaxaca cheese over the meat and chips. Top with diced onions, diced tomatoes, and sliced jalapeños.

            Bake: Place the nachos in the oven and bake for about 10-12 minutes or until the cheese is melted and bubbly.

              Garnish: Once baked, remove from the oven, and sprinkle with fresh cilantro. Add avocado slices on top and drizzle sour cream.

                Serve: Serve hot with lime wedges on the side for squeezing over the nachos. Enjoy immediately!
