200g kunafa dough (shredded phyllo dough)

100g unsalted butter (melted)

200g ricotta cheese

100g sugar

1 cup unsalted pistachios (finely chopped)

½ teaspoon vanilla extract

1 cup sugar

1 cup water

1 tablespoon lemon juice

1 teaspoon rose water (optional)

Honey syrup for drizzling (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 180°C (350°F).

    Prepare the Kunafa Base:

      - In a large bowl, combine the kunafa dough with the melted butter. Mix until the dough is completely coated in butter.

        Shape the Nest:

          - Take small handfuls of the buttered kunafa and mold them into nest shapes on a baking tray lined with parchment paper, making sure to leave a small cavity in the center for the filling.

            - Repeat until all the dough is used, creating about 8-10 nests.

              Bake the Nests:

                - Bake in the preheated oven for 20-25 minutes or until golden brown and crispy. Remove from the oven and let cool slightly.

                  Prepare the Filling:

                    - In a mixing bowl, combine ricotta cheese, sugar, vanilla extract, and half of the pistachios. Mix until smooth and well combined.

                      Fill the Nests:

                        - Carefully spoon the ricotta mixture into the baked kunafa nests, filling each nest generously.

                          Make Simple Syrup:

                            - In a small saucepan, combine 1 cup of sugar, 1 cup of water, and lemon juice. Bring to a boil and let simmer for 10 minutes until slightly thickened. Add rose water if desired for added aroma.

                              Serve:

                                - Drizzle the simple syrup over the filled nests. Top with the remaining chopped pistachios. For an added sweetness, drizzle with honey syrup as well if you prefer.

                                  Garnish and Enjoy!

                                    - Serve warm or at room temperature as a delightful dessert.
