For the Corn Fritters:

1 cup fresh corn kernels (or canned)

1/2 cup all-purpose flour

1/2 teaspoon baking powder

2 large eggs

1/4 cup milk

1/4 cup chopped fresh parsley

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for frying)

For the Avocado Salsa:

1 ripe avocado, diced

1 small red onion, finely chopped

1 medium tomato, diced

1 small jalapeño, finely chopped (optional)

1 tablespoon fresh lime juice

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Make the Corn Fritters:

    - In a mixing bowl, combine the corn kernels, flour, and baking powder.

      - In another bowl, whisk together the eggs, milk, chopped parsley, salt, and pepper until well combined.

        - Pour the egg mixture into the corn mixture and stir until just combined.

          Cook the Fritters:

            - Heat olive oil in a large skillet over medium heat.

              - Spoon 2-3 tablespoons of the corn batter into the pan for each fritter. Flatten gently with the back of a spoon.

                - Cook for about 3-4 minutes on each side or until golden brown and crisp. Remove and place on a paper towel to drain excess oil.

                  Prepare the Avocado Salsa:

                    - In a medium bowl, combine the diced avocado, red onion, tomato, jalapeño (if using), lime juice, salt, and pepper. Mix gently to avoid mashing the avocado. Adjust seasoning if necessary.

                      Serve:

                        - Serve the corn fritters hot, topped with a generous spoonful of avocado salsa. Garnish with fresh cilantro if desired.
