2 cups glutinous rice flour

1 cup coconut milk

1 cup water

1 cup sugar

2 tsp baking powder

1/2 tsp salt

2 eggs, beaten

1/2 cup shredded coconut (fresh or desiccated)

1/4 cup butter, melted

1/4 cup cheese (like Edam or cheddar), grated

2-3 banana leaves, softened (or parchment paper)

Grated salted egg for topping (optional)

Additional coconut for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). If using, prepare your muffin tin by lining it with banana leaves or parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the glutinous rice flour, sugar, baking powder, and salt. Mix well to combine all dry ingredients.

      Combine Wet Ingredients: In another bowl, combine the coconut milk, water, and beaten eggs. Whisk until the mixture is smooth.

        Combine Mixtures: Gradually add the wet mixture into the dry mixture, stirring until there are no lumps and the batter is well combined. Then fold in the melted butter and shredded coconut.

          Fill Molds: Pour the batter into the prepared muffin tin or molds, filling them about 2/3 full.

            Add Toppings: Sprinkle grated cheese on top of each portion. If desired, you can also add grated salted egg for extra flavor.

              Bake: Place the molds in the preheated oven and bake for about 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                Cool and Serve: Once baked, remove from the oven and allow them to cool slightly before removing from the molds. Serve warm, garnished with extra shredded coconut if you like.
