2 large ripe bananas, mashed

1 cup crushed pineapple, drained

1/2 cup shredded coconut (unsweetened)

1/2 cup unsalted butter, softened

3/4 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup chopped macadamia nuts (optional)

Preheat and Prep: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the mashed bananas, crushed pineapple, and vanilla extract. Mix until well combined.

      Add Eggs: Beat in the eggs one at a time, mixing until each is incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
