12 oz spaghetti or fettuccine

2 boneless, skinless chicken breasts, sliced into strips

4 oz pancetta or thick-cut bacon, diced

3 large eggs

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 cup heavy cream

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Extra Parmesan cheese for serving

Olive oil (for cooking)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package directions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat a drizzle of olive oil. Season the sliced chicken with salt and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook the Pancetta/Bacon: In the same skillet, add the diced pancetta or bacon. Cook until crispy, about 4-5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Prepare the Sauce: In a bowl, whisk together the eggs and heavy cream. Stir in the grated Parmesan cheese and a pinch of salt and pepper.

          Combine: Reduce heat to low and add the cooked pasta to the skillet with the pancetta and garlic. Pour the egg and cream mixture over the pasta, tossing quickly to combine and prevent the eggs from scrambling. If the sauce is too thick, add a bit of the reserved pasta water to achieve the desired creaminess.

            Add Chicken: Gently fold in the sautéed chicken, mixing well to ensure everything is coated with the rich carbonara sauce.

              Serve: Divide the carbonara onto plates, garnish with chopped fresh parsley and additional Parmesan cheese, if desired. Serve immediately.
