1 cup semolina

1 cup all-purpose flour

1 cup sugar

1 cup yogurt

1/2 cup milk

1/2 cup vegetable oil

3 large eggs

2 teaspoons baking powder

1 teaspoon vanilla extract

1/4 teaspoon salt

Zest of 1 lemon (optional)

1/2 cup raisins (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.

    In a large mixing bowl, whisk together the semolina, all-purpose flour, sugar, baking powder, and salt.

      In a separate bowl, beat the eggs and add in the yogurt, milk, vegetable oil, and vanilla extract. Mix well until combined.

        Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. If using, fold in the lemon zest and raisins.

          Pour the batter into the prepared cake pan and spread it evenly.

            Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.

              Once baked, allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
