Ingredients

1 lb beef liver, sliced into 1/4-inch thick pieces

2 large onions, thinly sliced

2 tablespoons olive oil

2 tablespoons butter

1 cup milk (for soaking)

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Liver: Begin by soaking the sliced beef liver in milk for about 30 minutes. This step helps to mellow the strong flavor of the liver and makes it tender.

Sauté Onions: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes. Once done, remove them from the skillet and set aside.

Cook the Liver: In the same skillet, add 2 tablespoons of butter over medium-high heat. Remove the liver from the milk and pat dry with paper towels. Season both sides with garlic powder, paprika, salt, and pepper.

Sear the Liver: Place the liver slices in the hot skillet. Cook for about 3-4 minutes on one side, then flip and cook for an additional 3-4 minutes. Do not overcook, as liver can become tough if cooked too long.

Combine Ingredients: Once cooked, add the caramelized onions back to the skillet with the liver. Toss them gently to combine and heat through for an additional minute.

Serve: Transfer the beef liver and onions to a serving platter. Garnish with fresh parsley for a pop of color and freshness. Pair with mashed potatoes or sautéed greens for a complete meal.
