Beef and Broccoli Lo Mein

Ingredients
  

8 oz lo mein noodles or spaghetti

1 lb beef sirloin, thinly sliced

2 cups broccoli florets

1 bell pepper, thinly sliced (red or green)

1 carrot, julienned

3 cloves garlic, minced

1-inch piece ginger, grated

3 green onions, chopped

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 tablespoon cornstarch

2 tablespoons vegetable oil (for cooking)

Salt and pepper to taste

Sesame seeds (for garnish)

Cook the Noodles: In a large pot of boiling salted water, cook the lo mein noodles or spaghetti according to the package instructions until al dente. Drain and set aside.

    Prepare the Beef Marinade: In a bowl, combine the thinly sliced beef, soy sauce, oyster sauce, sesame oil, cornstarch, and a sprinkle of salt and pepper. Mix well and let it marinate for 15 minutes.

      Blanch the Broccoli: While the beef is marinating, bring a small pot of water to a boil. Add the broccoli florets and blanch for about 2 minutes until vibrant green and tender-crisp. Immediately drain and transfer to a bowl of ice water to stop cooking. Drain again after a couple of minutes.

        Stir-fry the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef in a single layer and stir-fry for about 3-4 minutes until browned and cooked through. Remove the beef from the skillet and set aside.

          Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic, grated ginger, bell pepper, and carrot. Stir-fry for 2-3 minutes until they are tender.

            Combine Ingredients: Return the beef to the pan, along with the blanched broccoli. Add the cooked lo mein noodles and toss everything together, mixing well. Adjust seasoning with extra soy sauce or pepper if needed.

              Finish and Serve: Cook for another 2-3 minutes until everything is heated through. Toss in chopped green onions just before serving. Garnish with sesame seeds if desired.
