BBQ Chicken Quesadilla

Ingredients
  

2 cups cooked chicken, shredded

1 cup BBQ sauce (your choice)

1 cup shredded cheese (cheddar or mozzarella)

1/2 cup red onion, thinly sliced

1/2 cup bell pepper, thinly sliced (any color)

4 large flour tortillas

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Sour cream and guacamole, for serving

Instructions
 

In a mixing bowl, combine the shredded chicken and BBQ sauce. Add salt and pepper to taste.

    Heat one tablespoon of olive oil in a large skillet over medium heat. Add the sliced red onion and bell pepper, sautéing until they are tender, about 3-4 minutes.

      Remove the vegetables from the skillet and set aside. In the same skillet, add another tablespoon of olive oil and place one flour tortilla in the hot skillet.

        On one half of the tortilla, layer a generous amount of the BBQ chicken mixture, followed by sautéed onions and bell peppers, and then sprinkle shredded cheese over the top.

          Fold the tortilla in half to cover the filling. Cook for about 3-5 minutes or until the bottom is golden brown and crispy. Carefully flip and cook for another 3-5 minutes on the other side. Repeat with the remaining tortillas and filling.

            Once all quesadillas are cooked, cut into wedges and garnish with fresh cilantro if desired. Serve hot with sour cream and guacamole on the side.
