BBQ Chicken Grilled Cheese

Perfectly crispy sourdough bread is layered with tender, flavorful shredded chicken mixed with your favorite BBQ sauce, creamy cheddar, and mozzarella cheese. Topped with zesty red onions and garnished with fresh cilantro or green onions, this sandwich is quick to make and packed with mouthwatering flavors. Ingredients
  

2 cups cooked chicken, shredded

1/2 cup BBQ sauce (your choice of flavor)

4 slices of sourdough bread

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/4 cup red onion, thinly sliced

2 tablespoons butter, softened

Optional: fresh cilantro or green onions for garnish

Instructions
 

In a mixing bowl, combine the shredded chicken and BBQ sauce, ensuring the chicken is fully coated.

    Preheat a non-stick skillet over medium heat.

      Take two slices of sourdough bread and spread butter on one side of each slice.

        Place the unbuttered side of the first slice down in the skillet. Layer half of the cheddar cheese, then the BBQ chicken mixture, followed by the red onion slices, and top with the remaining cheddar and mozzarella cheese.

          Cover with the second slice of sourdough, buttered side up.

            Grill on one side until golden brown and the cheese starts melting (about 3-4 minutes). Carefully flip the sandwich and grill the other side for another 3-4 minutes, adding more butter to the skillet if necessary.

              Once both sides are golden brown and the cheese is fully melted, remove the sandwich from the skillet and let it sit for a minute before slicing.

                Cut in half, garnish with fresh cilantro or green onions if desired, and serve warm.
