1 cup pearl barley

4 cups vegetable or chicken broth

1 cup unsweetened almond milk (or any milk of your choice)

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 tablespoon olive oil

2 tablespoons honey or maple syrup (for sweetness)

Fresh herbs (for garnish, optional)

Chopped nuts or seeds (for topping, optional)

Instructions
 

Rinse the pearl barley under cold water and drain it well. This helps remove any excess starch.

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Add the minced garlic and thyme to the pot, stirring for about 1 minute until fragrant.

        Pour in the vegetable or chicken broth, and bring to a boil. Add the rinsed barley, salt, and pepper. Reduce to a simmer, cover, and let it cook for about 30-35 minutes, or until the barley is tender.

          Once the barley is cooked, stir in the almond milk and honey or maple syrup. Let it simmer on low for an additional 5-10 minutes, stirring occasionally, until the porridge reaches your desired consistency.

            Taste and adjust the seasoning if necessary.
