8 oz spaghetti or fettuccine

1 lb large shrimp, peeled and deveined

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp Sriracha (adjust for spice level)

2 cloves garlic, minced

2 tbsp olive oil

1 cup cherry tomatoes, halved

2 cups baby spinach

1/4 cup green onions, sliced

Salt and pepper to taste

Lime wedges for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Sauce: In a large bowl, whisk together the mayonnaise, sweet chili sauce, and Sriracha until smooth. Set aside.

      Cook the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp to the skillet and season with salt and pepper. Cook the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.

        Combine the Pasta: In the same skillet with the shrimp, add the cooked pasta, cherry tomatoes, and baby spinach. Pour the bang bang sauce over the mixture, tossing everything together to coat evenly. If the mixture is too thick, add some reserved pasta water to help loosen it.

          Garnish and Serve: Once well combined, sprinkle with sliced green onions and adjust seasoning if necessary. Serve hot with lime wedges on the side for an extra zesty kick.
