1 lb (450g) boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces

1 cup cornstarch

2 teaspoons garlic powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 egg, beaten

Vegetable oil, for frying

1 cup cooked jasmine rice (or preferred grain)

1 cup shredded red cabbage

1 cup diced cucumber

1 avocado, sliced

1/4 cup green onions, chopped

1/4 cup cilantro, chopped (optional)

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

Salt to taste

Prepare the Bang Bang Sauce: In a bowl, mix together mayonnaise, sweet chili sauce, sriracha, lime juice, and salt. Adjust spice levels to your preference. Set aside.

    Prepare the Chicken: In a bowl, combine cornstarch, garlic powder, paprika, salt, and black pepper. Toss the chicken pieces in the beaten egg first, then dredge them in the cornstarch mixture until well-coated.

      Fry the Chicken: Heat a generous amount of vegetable oil in a deep skillet or pot over medium-high heat. Once the oil is hot (around 350°F or 175°C), carefully add the coated chicken pieces in batches. Fry until golden brown and cooked through, about 4-6 minutes. Remove and drain on paper towels.
