For the Chicken:

1 lb (450g) boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust for spiciness)

1 teaspoon lime juice

Salt to taste

For the Bowls:

2 cups cooked jasmine rice (or quinoa)

2 cups mixed greens (spinach, arugula, etc.)

1 cup shredded carrots

1 cup cucumber, sliced

1 avocado, sliced

Sesame seeds and chopped green onions for garnish

Instructions
 

Prepare the Chicken:

    - In a bowl, marinate the chicken breasts in buttermilk for at least 30 minutes (or overnight in the fridge for better flavor and tenderness).

      Dredge the Chicken:

        - In a shallow dish, mix together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper.

          - Remove the chicken from the buttermilk, letting the excess drip off, then dredge it thoroughly in the flour mixture until well-coated.
