Bang Bang Chicken Bowl

Made with tender, marinated chicken thighs coated in a crispy panko crust, it's served over a bed of fluffy jasmine rice, steamed broccoli, and vibrant bell peppers. Drizzled with a zesty Bang Bang sauce and topped with creamy avocado, green onions, and sesame seeds, each bite is a flavor explosion. 1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup panko breadcrumbs

1 cup cooked jasmine rice

1 cup broccoli florets (steamed)

1/2 cup sliced red bell peppers

1 avocado, sliced

1 green onion, sliced for garnish

Sesame seeds for garnish

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tsp lime juice

Instructions
 

Marinate the Chicken: In a medium bowl, combine the buttermilk with garlic powder, paprika, cayenne pepper, salt, and pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour (or overnight for best results).

    Prepare the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Set aside.

      Bread the Chicken: Preheat your oven to 400°F (200°C). In one bowl, place the flour mixed with a pinch of salt and pepper. In another bowl, place the panko breadcrumbs. Take the marinated chicken out of the buttermilk, letting excess drip off. Dredge each piece in flour, then dip into the panko breadcrumbs, pressing firmly to adhere.

        Bake the Chicken: Place the breaded chicken on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until the chicken is golden brown and fully cooked, reaching an internal temperature of 165°F (74°C).

          Assemble the Bowls: While the chicken is baking, prepare the bowl. In each serving bowl, add a scoop of jasmine rice, steamed broccoli, and sliced bell peppers. Carefully place a few pieces of the baked chicken on top.

            Finish with Toppings: Drizzle the Bang Bang sauce generously over the chicken. Add slices of avocado and sprinkle with green onions and sesame seeds for garnish.
