1 lb boneless, skinless chicken thighs

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper, to taste

1 cup cooked jasmine rice

1 cup shredded lettuce

1 cup chopped cucumbers

1/2 cup shredded carrots

1/4 cup green onions, sliced

1/2 cup Bang Bang sauce (see below for recipe)

Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for heat)

1 teaspoon rice vinegar

Salt, to taste

Prepare the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and salt. Adjust the sriracha to reach your desired level of spiciness. Set aside.

    Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

      Prep the Chicken: Pat the chicken thighs dry with paper towels. In a bowl, combine flour, garlic powder, onion powder, paprika, salt, and pepper. Dredge each chicken thigh in the flour mixture, shaking off excess.

        Coat the Chicken: Dip the floured chicken into the beaten eggs, then coat thoroughly with panko breadcrumbs. Transfer to the prepared baking sheet.

          Bake the Chicken: Bake the chicken in the preheated oven for 25-30 minutes or until the chicken is cooked through and the coating is golden brown and crispy. Use a meat thermometer to ensure internal temperature reaches 165°F (75°C).
